Tait Farm Foods is celebrating 30 years of making all-natural Fruit Shrubs. What first began as a necessity to save the crop of ripe raspberries after a week of rain in 1987 on Tait’s original-pick farm, resulted in the start of a specialty food company that now produces over 60 products including 15 flavors of Fruit Shrubs.
What is shrub? Popular during colonial America, shrub is a syrup-like substance created by mixing vinegar, fruit, and sugar and allowing them to ferment together. Putting up shrub is a method of preserving the abundance of fruit that ripens during summer and fall months.
In addition to being used in handcrafted beverages (alcoholic or non), shrubs can be used in salad dressings and as glazes for meat dishes.
